Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. Lightly flour your work surface and unfold the thawed puff pastry sheet. If it’s cracked at the folds, gently press the cracks back together with your fingers. Roll it out just slightly to even out the thickness—about a 10×12 inch rectangle.
  3. Spread the Dijon mustard evenly over the pastry, leaving a 1-inch border on one long edge (this helps seal the roll). Don’t go overboard—a thin, even layer is all you need.
  4. Layer the ham slices over the mustard, overlapping them slightly. Cover the entire surface except the bare border. The ham should be in a single layer—not too thick or the roll will be hard to slice.
  5. Sprinkle the shredded cheese evenly over the ham. Press it down gently so it sticks. Don’t pile it too high or it will squeeze out during rolling.
  6. Starting from the long edge with the filling, roll the pastry tightly into a log. Roll slowly and evenly, using your fingers to keep the filling snug. Seal the edge by pressing gently. The seam should be on the bottom.
  7. Wrap the log tightly in plastic wrap and refrigerate for at least 30 minutes, or up to 24 hours. This step is non-negotiable if you want clean slices. The cold pastry firms up and the filling sets, making slicing much easier.
  8. Remove the log from the fridge and unwrap. Using a sharp knife, slice into 1/2-inch thick rounds. If the log is very cold, let it sit at room temperature for 5 minutes to soften slightly—this prevents the pastry from cracking.
  9. Place the pinwheels on the prepared baking sheet, spacing them about 1 inch apart. They’ll puff up a bit but won’t spread much.
  10. Brush each pinwheel with the egg wash and sprinkle with your chosen topping. Be gentle—you don’t want to dislodge the filling.
  11. Bake for 15-18 minutes, or until the pastry is golden brown and puffed, and the cheese is bubbly. Rotate the pan halfway through for even browning.
  12. Let cool on the baking sheet for 5 minutes before transferring to a wire rack. This lets the cheese set slightly so it doesn’t all slide off when you pick one up.
