  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano (preferably Mexican oregano)
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 2 tablespoons olive oil, divided
  • ½ cup heavy cream or full-fat coconut milk
  • ½ cup fresh cilantro, chopped
  • Juice of 12 limes

Instructions

  1. Roast the pumpkin cubes: Preheat oven to 425°F. Toss diced pumpkin with 1 tablespoon olive oil, a pinch of salt, and a dash of smoked paprika. Spread in a single layer on a parchment-lined baking sheet. Roast for 20-25 minutes, flipping halfway, until caramelized and fork-tender. Set aside.
  2. Sauté the aromatics: In a large skillet over medium heat, warm 1 tablespoon olive oil. Add diced onion and poblano pepper, cooking for 5-6 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
