Tender chicken thighs swimming in a sticky, sweet-savory honey garlic sauce that practically glazes itself while you go about your day. This 4-ingredient crockpot meal is perfect for busy weeknights and tastes like you spent hours stirring and reducing.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs
  • ½ cup honey
  • ⅓ cup low-sodium soy sauce
  • 45 cloves garlic, minced
  • Optional: sesame seeds, sliced green onions, lime juice for garnish

Instructions

  1. Trim excess fat from chicken thighs and pat dry with paper towels.
  2. Mince garlic cloves finely.
  3. In a small bowl, whisk together honey, soy sauce, and minced garlic.
  4. Place chicken thighs in a single layer in a 4-6 quart crockpot. Pour sauce evenly over the top.
  5. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours. (LOW recommended for best texture.)
  6. Check for doneness; chicken should be fork-tender. For a thicker glaze, leave lid off for last 15-20 minutes.
  7. Optional: Transfer cooked thighs to a baking sheet, spoon sauce over, and broil on HIGH for 2-3 minutes for caramelization.
  8. Let chicken rest 5 minutes before serving. Spoon extra sauce over top and garnish as desired.

Notes

Don’t lift the lid during cooking to check—every time you open it, you lose heat and extend cooking time. For a thicker sauce, whisk in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp cold water) and cook on HIGH for 10-15 minutes. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
