Easy Crockpot Broccoli Cheddar Soup Recipe

A lighter copycat broccoli cheddar soup that’s creamy, cheesy, and full of tender broccoli florets, made in the crockpot with simple ingredients and less heavy cream.

  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 3 cups low-sodium vegetable broth
  • 2 cups low-fat milk (2%)
  • 4 cups fresh broccoli florets (about 2 medium heads, cut into bite-sized pieces)
  • 2 medium carrots, peeled and shredded
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • 3 tablespoons all-purpose flour
  • 8 ounces sharp cheddar cheese, shredded (about 2 cups)
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard

Instructions

  1. Sauté the aromatics: Melt the butter in a large skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant. Transfer the mixture to your slow cooker.
  2. Build the base: Add the vegetable broth, shredded carrots, smoked paprika, salt, and pepper to the slow cooker. Stir to combine.
  3. Add the broccoli: Place the broccoli florets on top of the liquid. Do not stir them in yet.
  4. Cook on low: Cover and cook on low for 3-4 hours, or on high for 1.5-2 hours, until the broccoli is tender when pierced with a fork.
  5. Make the thickener: About 20 minutes before serving, whisk the flour into 1/2 cup of the low-fat milk until smooth. Set aside.
  6. Add the dairy: Stir the remaining milk into the slow cooker. Then slowly pour in the flour slurry while stirring constantly.
  7. Melt the cheese: Add the shredded cheddar, Parmesan, and Dijon mustard. Stir gently until the cheese is completely melted and the soup is smooth, about 2-3 minutes.
  8. Adjust and serve: Taste and add more salt or pepper if needed. Serve hot with crusty bread or oyster crackers.

Notes

Shred your own cheese for best melting. Add cheese gradually to prevent clumping. Let soup cool for 5 minutes before serving for best consistency. Soup thickens as it sits; thin with milk or broth if needed.
