Ingredients

Scale
  • 1.5 to 2 pounds flank steak, sliced against the grain into thin strips
  • 3 to 4 cups broccoli florets (about one large head)
  • ½ cup low-sodium soy sauce
  • ¼ cup beef broth
  • ¼ cup packed brown sugar
  • 6 to 8 cloves garlic, thinly sliced
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1 tablespoon fresh ginger, grated
  • ½ teaspoon red pepper flakes (optional)
  • 2 to 3 green onions, sliced for garnish
  • 1 tablespoon sesame seeds for garnish

Instructions

  1. Slice the flank steak against the grain into thin strips, about ¼-inch thick.
  2. Place the sliced beef in the bottom of the slow cooker.
  3. In a small bowl, whisk together the soy sauce, beef broth, brown sugar, sliced garlic, grated ginger, sesame oil, and red pepper flakes if using.
  4. Pour the sauce over the beef in the slow cooker. Toss gently with tongs to coat.
  5. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours.
  6. About 30 minutes before serving, add the broccoli florets. Gently stir into the sauce. Cover and cook on high for 20 to 30 minutes until bright green and tender.
  7. Remove the beef and broccoli from the slow cooker with tongs and set aside.
  8. In a small bowl, mix the cornstarch and cold water until smooth. Pour into the hot sauce in the slow cooker and stir immediately.
  9. Let the sauce cook uncovered on high for 10 to 15 minutes, stirring occasionally, until thickened to a glossy, syrupy consistency.
  10. Return the beef and broccoli to the slow cooker and toss gently to coat with the thickened sauce. Garnish with sliced green onions and sesame seeds before serving.

Notes

Slice beef against the grain for tenderness. Add broccoli only in the last 30 minutes to avoid mush. Let sauce reduce uncovered for a thicker consistency. For gluten-free, use tamari or coconut aminos instead of soy sauce.
