  • 4 oz cream cheese, softened (115 g)
  • ½ cup grated Parmesan cheese
  • ½ cup chicken broth (120 ml), homemade or low-sodium store-bought
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • Salt and pepper to taste
  • Optional: red pepper flakes, fresh basil or parsley for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and dried Italian herbs. (Approx. 5 minutes)
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once shimmering, add the chicken breasts. Cook about 5-6 minutes on each side until golden brown but not fully cooked through. Remove chicken and set aside. (Approx. 12 minutes)
  3. Lower heat to medium and add minced garlic and chopped sun-dried tomatoes to the skillet. Stir for 1-2 minutes until fragrant, avoiding burning the garlic. (Approx. 2 minutes)
  4. Pour in ½ cup chicken broth, scraping up any browned bits from the pan. Let it simmer for 2 minutes to reduce slightly.
  5. Reduce heat to low. Add heavy cream and softened cream cheese in chunks. Whisk gently until the cream cheese melts completely and the sauce is smooth. Stir in grated Parmesan cheese. Add a splash more broth or cream if the sauce is too thick. (Approx. 5 minutes)
  6. Nestle the browned chicken breasts back into the sauce. Cover with a lid and simmer on low for about 8-10 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  7. Taste the sauce and adjust salt, pepper, and optional red pepper flakes. Garnish with fresh chopped basil or parsley if desired.
