These easy cream cheese pinwheel roll-ups with turkey and spinach are a quick, simple, and delicious snack or light lunch option that comes together in under 15 minutes. The creamy tang of cream cheese pairs perfectly with mild turkey and fresh spinach for a satisfying bite.

Ingredients

Scale
  • 4 large flour tortillas (8-inch)
  • 8 oz cream cheese, softened
  • 8 oz deli turkey slices, thinly sliced
  • 2 cups fresh spinach leaves, washed and dried
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon freshly cracked black pepper
  • Optional: 1/2 cup shredded cheddar or mozzarella cheese
  • Optional: a few thin slices of red bell pepper

Instructions

  1. Prepare your workspace: Lay out a clean cutting board and gather all ingredients. Soften the cream cheese by leaving it at room temperature for about 20 minutes, or microwave it briefly in 5-second bursts until spreadable.
  2. Mix the cream cheese: In a small bowl, stir together the softened cream cheese, garlic powder, and freshly cracked black pepper until smooth and well combined.
  3. Spread the cream cheese: Lay one large flour tortilla flat on the cutting board. Use a spoon or spatula to spread a thin, even layer of the cream cheese mixture over the entire surface, reaching all the edges.
  4. Add turkey and spinach: Place a single layer of turkey slices over the cream cheese, covering the tortilla but leaving a small margin around the edges. Evenly distribute fresh spinach leaves on top of the turkey. If using, sprinkle shredded cheese or sliced bell peppers now.
  5. Roll it up: Starting from one edge, roll the tortilla tightly but carefully into a log shape. Wrap the rolled tortilla tightly in plastic wrap or parchment paper to help it hold its shape.
  6. Chill: Place the wrapped roll-ups in the fridge for at least 20 minutes to firm up the roll and make slicing easier.
  7. Slice into pinwheels: Remove the roll-ups from the fridge and unwrap. Using a sharp knife, cut each roll into 1-inch (2.5 cm) pinwheel slices. Arrange on a serving platter and enjoy immediately or chill until ready to serve.

Notes

Soften cream cheese before spreading to avoid tearing tortillas. Use fresh, pliable tortillas and warm them slightly if dry. Roll tightly but not too hard to prevent filling from squishing out. Chill roll-ups at least 20 minutes before slicing for clean pinwheel shapes. Use a sharp knife and clean between cuts for neat edges. Spinach should be thoroughly washed and dried to avoid soggy tortillas. Variations include vegetarian fillings, spicy twists, gluten-free wraps, and cheese upgrades.
