Easy Cranberry Brie Bites: Best Puff Pastry Appetizer

These cranberry brie bites are the perfect appetizer: flaky puff pastry cups filled with creamy brie and tart cranberry sauce, finished with a touch of honey and fresh rosemary. Ready in about 25 minutes, they’re a crowd-pleaser for any gathering.

  • 1 package (about 17.3 ounces / 490 grams) frozen puff pastry sheets, thawed
  • 8 ounces (225 grams) brie cheese, rind on, cut into 24 small cubes
  • 1/2 cup (160 grams) cranberry sauce (canned or homemade)
  • 2 tablespoons (30 milliliters) honey
  • 2 sprigs fresh rosemary, finely chopped (optional)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Flaky sea salt, for finishing (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Thaw the puff pastry at room temperature for about 30 minutes until cold but pliable.
  3. Lightly flour your work surface. Unfold the pastry sheets and gently roll them out just enough to smooth the creases, to about 1/8 inch thick.
  4. Cut the pastry into 24 squares (cut each sheet into 4 rows and 3 columns to get 12 pieces per sheet).
  5. Press each pastry square into a cup of a 24-cup mini muffin tin, letting the corners stick up slightly. Do not stretch the pastry.
  6. Cut the brie wheel in half through the middle, then cut each half into 12 small cubes (about 1/2 inch each). Leave the rind on.
  7. Place one cube of brie in the center of each pastry cup.
  8. Spoon about 1 teaspoon of cranberry sauce over each piece of brie.
  9. Brush the exposed edges of the pastry with the egg wash.
  10. Drizzle a tiny bit of honey over each bite.
  11. Bake for 15-18 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  12. Let the bites cool in the pan for 5 minutes before removing.
  13. Garnish with fresh rosemary and a pinch of flaky sea salt. Serve warm or at room temperature.

Notes

For make-ahead: assemble bites completely (without egg wash and honey) and refrigerate for up to 24 hours. Brush with egg wash and honey right before baking. To freeze: freeze unbaked bites on a baking sheet, then transfer to a freezer bag for up to 2 months. Bake from frozen, adding a few extra minutes. For best results, keep pastry cold and do not overfill cups.
