  • 1/2 teaspoon vanilla extract
  • 12 tablespoons sweetener of choice (maple syrup, honey, or simple syrup)
  • Ice (generous handful)
  • Whipped cream (optional, for topping)
  • Extra pumpkin pie spice (for garnish)

Instructions

  1. Make the pumpkin base: In a small saucepan over medium-low heat, combine the pumpkin puree, pumpkin pie spice, vanilla extract, and sweetener. Whisk constantly for about 2 minutes until warm, fragrant, and fully combined into a thick, glossy paste. If too thick, add a splash of milk to loosen it up.
  2. Add the milk: Pour in the milk and whisk again. Continue heating for another 2-3 minutes until steaming hot but not boiling, with tiny bubbles forming around the edges. The color should turn a creamy orange.
  3. Brew your coffee: While the milk mixture heats, brew strong coffee or pull espresso shots. Use a dark roast for best flavor. If using a drip coffee maker, use less water to make it extra concentrated.
