This Easy Candy Corn Popcorn Bark is a quick and simple fall treat that combines salty, buttery popcorn with creamy white chocolate and sweet candy corn. It’s the perfect shareable snack for Halloween parties, movie nights, or any autumn gathering.

  • 8 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 2 tablespoons unsalted butter, melted
  • 1 ½ cups white chocolate chips or melting wafers
  • 1 cup candy corn
  • ½ cup roasted, salted peanuts (optional)
  • ¼ teaspoon flaky sea salt (like Maldon)

Instructions

  1. Prep your pan. Line a large rimmed baking sheet (13×18 inches) with parchment paper or a silicone baking mat, letting the paper come up the sides slightly. Set aside.
  2. Pop your popcorn. If using an air popper, pop about ½ cup of kernels. If using microwave popcorn, pop one standard bag. You need about 8 cups of popped popcorn. Spread on the prepared baking sheet and pick out any unpopped kernels.
  3. Butter the popcorn. Transfer the popped popcorn to a large mixing bowl. Drizzle the 2 tablespoons of melted butter over the top. Use your hands or a spatula to gently toss until evenly coated.
  4. Melt the white chocolate. Place the white chocolate chips or wafers in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until completely smooth and melted (about 1 minute 30 seconds total). Be careful not to overheat.
  5. Create the first layer. Pour about half of the melted white chocolate over the buttered popcorn. Gently fold with a rubber spatula until every kernel has a little chocolate.
  6. Spread the base. Transfer the chocolate-coated popcorn back to the prepared baking sheet. Spread into an even layer, pressing down gently.
  7. Add the toppings. Sprinkle the candy corn and peanuts (if using) evenly over the popcorn layer.
  8. Drizzle the remaining chocolate. Drizzle the remaining melted white chocolate back and forth over the top of the popcorn and candy corn using a spoon or piping bag.
  9. Finish with salt. Immediately sprinkle the flaky sea salt over the entire surface.
  10. Set the bark. Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is completely firm and set. For a quicker set, freeze for 15 minutes.
  11. Break it up. Once set, lift the parchment paper out of the pan. Break the bark into rustic, irregular pieces.

Notes

Work quickly once the chocolate is melted as it sets fast. Ensure all equipment is dry to prevent white chocolate from seizing. For best texture, serve at room temperature and store in an airtight container at room temperature for up to 5 days. Can be frozen for up to 2 months.
