A warm, gooey baked brie topped with sweet fig jam and fresh rosemary, ready in just 20 minutes. Perfect for last-minute entertaining or a cozy night in.

Ingredients

Scale
  • 1 (8-ounce) wheel of brie cheese
  • ⅓ cup fig jam
  • 1 tablespoon fresh rosemary, finely chopped
  • 2 tablespoons honey
  • ¼ cup toasted walnuts or pecans (optional)
  • Crackers, sliced baguette, or apple slices for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Take the brie out of its packaging. Using a sharp knife, score the top rind in a crosshatch pattern — just shallow cuts about ¼-inch deep.
  3. Place the brie in your baking dish. If you want to make cleanup easier, line the dish with a small piece of parchment paper.
  4. Spoon the fig jam over the top of the brie, spreading it evenly.
  5. Sprinkle the chopped fresh rosemary over the jam.
  6. Bake for 12-15 minutes until the brie is soft and puffed up slightly. The center should feel jiggly when you gently shake the dish.
  7. Let it rest for 2 minutes.
  8. Right before serving, drizzle the honey over the top and scatter the toasted walnuts or pecans if you’re using them.
  9. Serve immediately with crackers, baguette slices, or apple slices.

Notes

Don’t overbake the brie; it will continue to soften as it sits. Score the rind, don’t remove it. Room temperature brie bakes more evenly. Watch the jam to prevent burning. You can prep everything up to a day ahead.
