  • 1 tablespoon Dijon mustard
  • 3 to 4 slices lean deli-style turkey breast
  • 1 cup fresh spinach leaves
  • ½ cucumber, thinly sliced
  • ½ red bell pepper, thinly sliced
  • 2 tablespoons shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Mix the cream cheese and mustard in a bowl until smooth and well blended.
  2. Thinly slice cucumber and red bell pepper; wash and dry spinach leaves.
  3. Lay one 8-inch tortilla flat and spread 2 tablespoons of the cream cheese mixture evenly over the surface, leaving a small border.
  4. Layer turkey slices evenly on top of the cream cheese, then add spinach leaves, cucumber strips, and bell pepper strips. Season with salt and pepper. Add shredded cheddar cheese if using.
  5. Roll the tortilla tightly but gently to avoid tearing, about 1 minute.
  6. Using a sharp serrated knife, cut the roll into 1-inch thick slices to make 6 to 8 pinwheels.
