  • 1 cup granulated sugar
  • 1 cup fresh orange juice (from about 2–3 oranges)
  • 1 tablespoon fresh ginger, finely grated
  • Zest of 1 orange (optional)
  • Pinch of salt (optional)
  • 1 cinnamon stick (optional)

Instructions

  1. Prep your ingredients: Wash fresh cranberries and pick out any soft or shriveled ones. Grate ginger using a microplane. Squeeze enough oranges to get 1 cup of fresh juice.
  2. Combine everything in the saucepan: Add cranberries, sugar, orange juice, and grated ginger to a medium saucepan. Stir to combine.
  3. Bring to a boil: Set saucepan over medium-high heat and bring mixture to a boil. Stir occasionally. Cranberries will start to pop.
  4. Reduce to a simmer: Reduce heat to medium-low so mixture is gently simmering. Cook for 10-12 minutes, stirring occasionally, until sauce thickens and color deepens to ruby red.
  5. Check the consistency: Sauce should be thick enough to coat the back of a spoon. It will thicken more as it cools.
  6. Cool and serve: Remove from heat. Let cool in pan for 10 minutes, then transfer to a serving bowl or storage container. Serve warm, at room temperature, or cold.

Notes

Don’t skip fresh ginger—it adds brightness and warmth that ground ginger can’t replicate. Watch for cranberries popping and keep pot uncovered. Use the back of a spoon to test thickness; sauce will thicken as it cools. Make ahead for best flavor—sauce improves after a day or two in the fridge. For a smoother sauce, use an immersion blender briefly. If sauce seems thin when first made, it will set up in the fridge overnight.
