Easy 30-Minute Taco Soup with Ranch Seasoning

This quick and easy taco soup combines ranch and taco seasonings for a tangy, smoky flavor that comes together in just 30 minutes. Perfect for busy weeknights, it’s a one-pot meal that pleases the whole family.

  • 1 pound ground beef (85/20)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 packet (1 oz) ranch seasoning mix
  • 1 packet (1 oz) taco seasoning mix
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 can (15 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 4 cups beef broth, low-sodium
  • 1 tablespoon olive oil
  • Optional toppings: shredded cheddar cheese, sour cream, sliced jalapeños, fresh cilantro, diced avocado, tortilla chips, lime wedges

Instructions

  1. Heat the olive oil in a Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up, until browned all over, about 5-7 minutes. Leave about a tablespoon of fat in the pot.
  2. Add the diced onion to the pot with the beef. Cook for 3-4 minutes, stirring occasionally, until the onion is soft and translucent. Add the minced garlic and cook for 30 seconds more until fragrant.
  3. Sprinkle the ranch seasoning and taco seasoning over the meat and onions. Stir well to coat evenly. Let it cook for about 1 minute to bloom the spices.
  4. Pour in the diced tomatoes with green chilies and the fire-roasted tomatoes, including their juices. Stir to combine, scraping up any browned bits from the bottom of the pot.
  5. Stir in the drained black beans and drained corn until evenly distributed.
  6. Pour in the beef broth and stir. Bring the soup to a gentle boil, then reduce the heat to low and let it simmer, uncovered, for 15-20 minutes. Taste after 10 minutes and adjust seasoning if needed.
  7. Ladle the soup into bowls and serve with desired toppings.

Notes

Don’t skip draining the beans to avoid a starchy broth. For a thicker soup, mash half the beans before adding. Use low-sodium broth to control salt. The soup tastes even better the next day.
