This creamy, savory butternut squash soup comes together in just 30 minutes with simple ingredients. It’s the perfect comforting bowl for chilly autumn evenings, naturally gluten-free and dairy-free.

  • 1 large butternut squash (about 3 pounds), peeled, seeded, and cut into 1-inch cubes
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth (low-sodium recommended)
  • 1/2 cup full-fat coconut milk (from a can) or heavy cream
  • 1 tablespoon fresh sage, finely chopped (plus 8–10 whole leaves for garnish)
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons pumpkin seeds (pepitas)
  • 1 tablespoon olive oil (for garnish)
  • Pinch of salt and smoked paprika (for garnish)
  • Freshly grated Parmesan cheese (optional, omit for dairy-free/vegan)
  • Extra drizzle of coconut milk or cream (for garnish)
  • A few fried sage leaves (for garnish)

Instructions

  1. Prepare the Squash (5 minutes): Peel the butternut squash with a vegetable peeler. Cut off the top and bottom ends. Slice the squash in half lengthwise and scoop out the seeds and stringy bits. Cut the squash into 1-inch cubes.
  2. Sauté the Aromatics (5 minutes): Place a large pot over medium heat and add 2 tablespoons of olive oil. Once shimmering, add the chopped onion. Cook for 3-4 minutes until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Cook the Squash (10 minutes): Add the cubed butternut squash to the pot. Sprinkle with 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon nutmeg. Stir to coat. Cook for 8-10 minutes, stirring occasionally, until the squash starts to get a little color on the edges and softens slightly.
  4. Add the Broth and Simmer (10 minutes): Pour in 4 cups of vegetable broth and add 1 tablespoon of chopped fresh sage. Stir well, scraping up any browned bits from the bottom. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes until the squash is very tender.
  5. Blend Until Smooth (2 minutes): Remove the pot from heat. Use an immersion blender to blend the soup directly in the pot until completely smooth. If using a regular blender, let the soup cool for 5 minutes, then blend in batches (remove center cap from lid and cover with a towel).
  6. Finish with Creaminess (1 minute): Stir in 1/2 cup of coconut milk (or heavy cream). Taste and adjust seasoning with more salt or pepper if needed. If too thick, add a splash more broth or water.
  7. Prepare the Garnish (5 minutes, while soup simmers): Heat a small skillet over medium heat with 1 tablespoon olive oil. Add pumpkin seeds, a pinch of salt, and smoked paprika. Toast for 2-3 minutes until fragrant. Remove to a plate. In the same skillet, fry whole sage leaves for 10-15 seconds per side until crispy.
  8. Serve: Ladle hot soup into bowls. Top with a swirl of extra coconut milk, toasted pumpkin seeds, crispy fried sage leaves, and freshly grated Parmesan cheese if desired. Serve immediately.

Notes

For the best flavor, don’t skip sautéing the squash first—it caramelizes the natural sugars. Use a light hand with sage as it’s a powerful herb. Be careful when blending hot liquid; always remove the center cap of a regular blender and cover with a towel. The soup tastes even better the next day as flavors meld. To make it vegan, use coconut milk and skip the Parmesan. For a thicker soup, let it simmer uncovered to reduce, or add a cornstarch slurry.
