Fudgy brownies topped with a sticky, jammy pecan pie filling infused with bourbon and maple syrup. A two-in-one dessert that’s perfect for gatherings and tastes even better the next day.

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (120g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder (Dutch-process preferred)
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • 2 cups (200g) pecan halves
  • ½ cup (160g) pure maple syrup
  • 3 tablespoons bourbon
  • ¼ cup (50g) light brown sugar, packed
  • 2 tablespoons unsalted butter, melted
  • 1 large egg, room temperature
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides. Lightly grease the parchment.
  2. In a small saucepan over low heat, melt 1 cup unsalted butter. Remove from heat and let cool slightly.
  3. In a large bowl, whisk together melted butter and 1 ½ cups granulated sugar until smooth and glossy. Add 3 eggs one at a time, whisking well after each. Stir in 2 teaspoons vanilla extract.
  4. In a separate bowl, whisk together 1 cup flour, ½ cup cocoa powder, ½ teaspoon salt, and ¼ teaspoon baking powder. Fold dry ingredients into wet mixture until just combined. Batter will be thick.
  5. Pour batter into prepared pan and spread evenly. Bake for 15 minutes. The top should be set but a toothpick inserted in the center should come out with wet crumbs.
  6. While the base bakes, prepare the topping: In a medium bowl, whisk together ½ cup maple syrup, 3 tablespoons bourbon, ¼ cup light brown sugar, 2 tablespoons melted butter, 1 egg, and a pinch of salt. Fold in 2 cups pecan halves until coated.
  7. Remove brownie base from oven and let rest 2-3 minutes. Pour pecan mixture over the top and spread evenly.
  8. Return to oven and bake for 25-30 minutes, until topping is bubbly and set, and edges pull away from the pan. A toothpick inserted into the brownie layer should come out with moist crumbs.
  9. Cool completely on a wire rack for at least 2 hours (preferably overnight) before slicing.
  10. Use parchment overhang to lift brownies out of the pan. Cut into squares with a sharp knife, wiping clean between cuts.

Notes

Don’t skip the partial bake—it prevents the pecan topping from sinking into the brownie. Toast pecans for deeper flavor. For clean slices, use a hot knife and wipe between cuts. Brownies taste even better the next day.
