  • 1 pound ground beef (80/20 blend recommended)
  • 6 soft burger buns or small flour tortillas
  • 1 cup shredded lettuce (iceberg or romaine)
  • 6 cheese slices (American or cheddar, optional)
  • 1/4 cup sliced pickles (dill or bread-and-butter)
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Dash of hot sauce (optional)
  • Salt and freshly ground black pepper
  • Butter or oil for cooking and toasting

Instructions

  1. Make the special sauce: In a small bowl, mix 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon Dijon mustard, 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, and a dash of hot sauce if desired. Stir well and refrigerate until ready.
  2. Prepare the lettuce and pickles: Rinse and finely shred about 1 cup of lettuce. Slice 1/4 cup pickles thinly. Set aside.
  3. Divide the ground beef into 6 equal balls, about 3 ounces each, loosely packed.
  4. Heat a cast iron skillet or heavy-bottomed frying pan over medium-high heat and add a little butter or oil. Let it get smoking hot (about 3-4 minutes).
  5. Place one beef ball in the pan and immediately press down with a spatula or burger press to about 1/4 inch thickness. Hold for 15-20 seconds to set the shape. Season with salt and pepper. Cook 2-3 minutes per side until edges are dark brown and crispy.
  6. Flip the patty carefully, place a cheese slice on top, and cook another 1-2 minutes until melted.
  7. While cooking patties, butter the insides of buns or tortillas and toast in a separate pan or oven until golden and warm.
  8. Assemble the tacos: Spread a spoonful of special sauce on the bottom bun or tortilla, add the crispy smash burger patty, top with shredded lettuce and pickles, then drizzle a bit more sauce if desired.
  9. Serve immediately while hot and fresh.

Notes

Use room temperature beef for best results. Press and hold patties firmly for 15-20 seconds to create a crispy crust. Season after smashing. Toast buns or tortillas just before assembling to keep them crisp. Work in batches to avoid overcrowding the pan. Leftover patties can be frozen and reheated in a skillet to regain crispiness.
