  • 2 large eggs
  • 1 tablespoon water
  • 1/2 cup panko breadcrumbs
  • 1/4 cup almond flour
  • 1/3 cup grated parmesan cheese (freshly grated)
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon dried parsley
  • Olive oil spray or avocado oil spray

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack on a baking sheet and lightly spray with oil.
  2. Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and paprika. Let sit for a few minutes.
  3. Set up three shallow bowls: Bowl 1 with 1/4 cup all-purpose flour; Bowl 2 with 2 beaten eggs and 1 tablespoon water; Bowl 3 with 1/2 cup panko, 1/4 cup almond flour, 1/3 cup grated parmesan, 1 teaspoon Italian seasoning, 1 teaspoon dried parsley, and a pinch of salt and pepper. Mix the breading ingredients together.
  4. Bread the pork chops: Coat one chop in flour, shaking off excess. Dip in egg wash, letting extra drip off. Press firmly into breadcrumb mixture, coating both sides. Place on prepared wire rack. Repeat with remaining chops.
  5. Spray the tops of the breaded chops with oil for 3-4 seconds per chop.
  6. Bake for 18-22 minutes, flipping halfway through. At the 10-minute mark, carefully flip each chop with tongs and spray the other side with oil. Chops are done when internal temperature reaches 145°F and crust is deep golden brown.
  7. Let rest for 3-5 minutes before serving.
