  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds / 700g)
  • 1 cup freshly grated Parmesan cheese (about 100g)
  • ½ cup panko breadcrumbs (about 50g)
  • ½ cup all-purpose flour (about 60g)
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • For the lemon herb sauce:
  • 3 tablespoons fresh lemon juice (from 1 large lemon)
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 clove garlic, minced
  • 3 tablespoons butter
  • 1 teaspoon honey (optional)
  • Salt and pepper to taste

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and onion powder. Let rest for about 10 minutes.
  2. Set up dredging stations: place flour in one shallow bowl, beaten eggs in a second bowl, and combine Parmesan, panko breadcrumbs, dried Italian herbs, salt, and pepper in a third bowl.
  3. Dust each chicken thigh lightly with flour, shaking off excess. Dip into beaten eggs, then press firmly into the Parmesan-panko mixture to coat evenly. Set aside on a plate.
  4. Heat olive oil in a large skillet over medium heat until shimmering but not smoking (about 2-3 minutes).
  5. Place chicken thighs skin-side down in the skillet. Cook undisturbed for 7-8 minutes until the crust is deep golden brown and skin is crisp.
  6. Flip the chicken carefully and cook the other side for 6-7 minutes until internal temperature reaches 165°F (74°C). Lower heat if crust browns too quickly.
  7. While chicken cooks, melt butter in a small saucepan over low heat. Add minced garlic and cook until fragrant (about 30 seconds). Stir in lemon juice, honey, parsley, and thyme. Season with salt and pepper. Keep warm.
  8. Transfer chicken to a plate and let rest for 5 minutes to redistribute juices and keep crust crisp.
  9. Spoon the zesty lemon herb sauce generously over the chicken before serving.
