This crispy maple glazed delicata squash is a simple, quick, and delicious fall side dish. Thinly sliced squash is roasted at high heat until caramelized, then glazed with maple syrup for a perfect balance of sweet and savory.

  • 2 medium delicata squash (about 1.5 pounds total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon cinnamon (optional but recommended)
  • ¼ teaspoon red pepper flakes (optional)
  • 4–5 sprigs fresh thyme (optional)

Instructions

  1. Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.
  2. Wash the delicata squash well. Cut off both ends, then slice in half lengthwise. Scoop out the seeds and stringy bits.
  3. Lay each half cut-side down and slice crosswise into ¼-inch thick half-moons.
  4. Place the sliced squash in a large mixing bowl. Drizzle with olive oil and toss gently to coat. Add salt, pepper, and cinnamon (if using). Toss again.
  5. Spread the squash slices in a single layer on the prepared baking sheet. Do not overlap.
  6. Roast for 10 minutes.
  7. Remove the pan from the oven. Drizzle the maple syrup evenly over the squash slices. Flip each slice and drizzle any pooled syrup over the flipped sides.
  8. Return the pan to the oven and roast for another 8-12 minutes, until the squash is tender and the edges are deep golden brown and crispy.
  9. If using thyme, scatter the sprigs over the squash during the last 2 minutes of roasting.
  10. Serve immediately. Optionally, sprinkle with flaky sea salt.

Notes

Don’t crowd the pan to avoid steaming. Slice uniformly for even cooking. Add maple syrup halfway through to prevent burning. Use a light-colored, heavy-gauge aluminum pan for best results. For convection ovens, reduce temperature by 25°F and check earlier.
