  • 1 large head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour (or 1:1 gluten-free baking flour blend)
  • 1/2 cup rice flour
  • 1/4 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup cold water
  • 1 tablespoon olive oil (or avocado oil)
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted (or vegan butter/coconut oil for dairy-free)
  • 1 teaspoon honey or maple syrup (optional)
  • Ranch dressing or blue cheese dressing, for serving
  • Celery sticks and carrot sticks, for serving
  • Fresh chives or green onions, chopped, for garnish

Instructions

  1. Preheat your oven to 450°F (230°C). Place a wire rack inside a baking sheet and set aside.
  2. Remove the leaves and tough core from the cauliflower. Cut into bite-sized florets, about 1 to 1.5 inches wide. Rinse briefly and pat very dry with a clean kitchen towel.
  3. In a large mixing bowl, whisk together the all-purpose flour, rice flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the cold water and olive oil, then whisk until smooth. The batter should be thick enough to coat the back of a spoon but still pourable.
  4. Add the dried florets to the bowl of batter. Gently toss until every floret is evenly coated. Let the coated florets rest for 5 minutes.
  5. Using a fork or tongs, lift each floret out of the batter, letting any excess drip off. Place them on the wire rack, leaving space between each one. Work in batches if needed.
  6. Bake for 20 minutes: bake for 10 minutes, then carefully flip each floret with tongs and bake for another 10 minutes, until golden brown and firm.
  7. While the cauliflower bakes, combine the buffalo wing sauce, melted butter, and honey (if using) in a small saucepan over low heat. Stir until smooth and keep warm.
  8. When the cauliflower is done, transfer it to a large bowl. Pour the warm buffalo sauce over the top and gently toss until every floret is coated.
  9. Transfer to a serving platter, sprinkle with chopped chives or green onions, and serve immediately with ranch or blue cheese dressing and celery and carrot sticks.

Notes

Dry cauliflower thoroughly to prevent soggy batter. Use a wire rack for even crisping. Don’t oversauce—toss lightly to avoid sogginess. Serve immediately for best crunch. Double the batch for parties. For air fryer: cook at 400°F for 12-14 minutes, shaking halfway.
