  • 2 pounds boneless, skinless chicken breasts or thighs, trimmed and cut into chunks
  • 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chilies, mild or medium
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 4 oz cream cheese, softened
  • ½ cup sour cream or Greek yogurt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh cilantro, chopped, for garnish (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a sauté pan over medium heat. Add the chopped onion and cook for about 5 minutes until translucent and slightly golden. Add minced garlic and cook for another 1-2 minutes until fragrant but not browned.
  2. Transfer the sautéed onion and garlic to the slow cooker. Add chicken chunks, rinsed white beans, diced green chilies, chicken broth, cumin, oregano, chili powder, smoked paprika, salt, and pepper. Stir gently to combine.
  3. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours until chicken is tender and beans are soft.
  4. Remove chicken pieces and shred with two forks. Return shredded chicken to the slow cooker and stir.
  5. Stir in softened cream cheese and sour cream (or Greek yogurt) until fully melted and incorporated.
  6. Taste and adjust seasoning with salt, pepper, or chili powder as desired. Add a splash of broth or water if chili is too thick.
  7. Ladle chili into bowls and garnish with fresh chopped cilantro. Optional toppings include shredded cheese, avocado slices, or a squeeze of lime.

Notes

For extra silky broth, blend about a cup of chili with an immersion blender before adding cream cheese. Use frozen chicken by increasing cooking time by 1 hour on low. To thicken chili, simmer uncovered or mash some beans. Dairy-free options include coconut cream and vegan cream cheese alternatives.
