These creamy overnight peanut butter protein oats are the perfect make-ahead breakfast. With just five minutes of prep, you get a thick, pudding-like texture with rich peanut butter flavor and a protein boost.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (whole or 2%)
  • 1/2 cup (120g) plain Greek yogurt
  • 1/4 cup (60g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 12 tablespoons (15-30ml) honey or maple syrup
  • 1 tablespoon (15g) chia seeds (optional)
  • Pinch of salt
  • For topping: fresh berries, sliced banana, extra peanut butter, dark chocolate chips, chopped peanuts (optional)

Instructions

  1. Combine the dry ingredients: In a mason jar or container, add rolled oats, chia seeds (if using), and protein powder. Stir to combine.
  2. Add the wet ingredients: Pour in milk, Greek yogurt, peanut butter, honey or maple syrup, and a pinch of salt.
  3. Mix thoroughly: Stir until peanut butter is fully incorporated and protein powder has dissolved, about 30-45 seconds. Alternatively, seal the jar and shake vigorously.
  4. Adjust consistency (optional): If too thick, add an extra tablespoon of milk; if too thin, add a tablespoon more oats.
  5. Seal and refrigerate: Cover tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. Serve cold or at room temperature: In the morning, stir well. If too thick, add a splash of milk.
  7. Add toppings and enjoy: Transfer to a bowl, top with berries, banana, extra peanut butter, or other toppings, and serve immediately.

Notes

For best results, use old-fashioned rolled oats, not instant or steel-cut. Warm the peanut butter slightly for easier mixing. Don’t skip the salt—it enhances the peanut butter flavor. Make a double batch for hosting. Leave at least an inch of space at the top of the jar for toppings.
