  • 1/2 cup (120ml) unsweetened vanilla almond milk
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1/2 ripe banana, mashed
  • 1 tablespoon (15ml) pure maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/8 teaspoon fine sea salt

Instructions

  1. In a small bowl, mash half of a ripe banana with a fork until smooth.
  2. In a mason jar or airtight container, combine the almond milk, Greek yogurt, peanut butter, maple syrup, and mashed banana. If using protein powder that tends to clump, whisk it into the milk and yogurt mixture now.
  3. Add the rolled oats, protein powder, chia seeds (if using), and salt.
  4. Stir vigorously for 30-45 seconds until no dry pockets remain. If too thick, add an extra tablespoon or two of milk.
  5. Seal the jar tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir well. If too thick, add a splash of milk. Top with sliced banana, extra peanut butter, chia seeds, or dark chocolate chips. Serve cold or microwave for 45-60 seconds if desired.

Notes

For the creamiest texture, whisk protein powder into the milk and yogurt before adding oats. Use rolled oats, not instant or steel-cut. The oats are best after 8-12 hours of soaking. Store in the fridge for up to 4 days. Do not freeze. For a vegan version, use plant-based milk, dairy-free yogurt, and vegan protein powder.
