  • 4 tablespoons unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat oven to 400°F. Scrub sweet potatoes, pierce with a fork, and roast on a baking sheet for 40-50 minutes until very soft.
  2. Let potatoes cool for 10 minutes, then slice open and scoop flesh into a large bowl or food processor. Discard skins.
  3. Add melted butter, maple syrup, bourbon, creme fraiche, beaten egg, vanilla, salt, cinnamon, and nutmeg to the sweet potatoes. Process until smooth, or mash and whisk by hand.
  4. In a medium bowl, combine flour, brown sugar, cinnamon, and salt. Add cold butter cubes and chopped pecans. Use a pastry cutter or fingers to work butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces.
  5. Reduce oven temperature to 350°F. Grease a 9×13-inch baking dish. Spread sweet potato filling evenly in dish. Sprinkle streusel topping evenly over filling.
  6. Bake for 25-30 minutes until filling is set and slightly puffed, and streusel is golden brown. Let rest 5-10 minutes before serving.
