This creamy, high-protein peanut butter overnight oats recipe is the perfect grab-and-go breakfast. With just 5 minutes of prep, you’ll have a delicious and satisfying meal ready for the week.

  • 1 cup old-fashioned rolled oats
  • 1 cup unsweetened almond milk
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1/4 cup creamy peanut butter
  • 12 tablespoons warm water

Instructions

  1. In your mason jar or a medium bowl, combine the rolled oats, chia seeds, and a pinch of sea salt. Give them a quick stir to distribute everything evenly.
  2. In a separate small bowl or a liquid measuring cup, whisk together the almond milk, Greek yogurt, maple syrup, and vanilla extract until smooth.
  3. Pour the wet mixture over the dry ingredients. Stir well until everything is fully combined, scraping the bottom and sides of the jar to get any dry pockets.
  4. In a small bowl, mix the peanut butter with 1-2 tablespoons of warm water. Stir until it becomes a smooth, drizzle-able consistency.
  5. Spoon half of the oat mixture into your jar. Drizzle a little bit of the thinned peanut butter over the top. Add the remaining oat mixture, then drizzle the rest of the peanut butter on top. Use a knife or a skewer to gently swirl the peanut butter into the oats.
  6. Place the lid on your jar and refrigerate for at least 6 hours, but preferably overnight.
  7. In the morning, give the oats a good stir. If they seem too thick, stir in a splash of milk to loosen them up. Top with sliced banana, chopped peanuts, a drizzle of honey, or any other desired toppings. Eat cold or let sit at room temperature for 10 minutes.

Notes

For extra creaminess, blend 1/4 cup of the oats with the milk and yogurt before adding the rest of the ingredients. The chia seed ratio is non-negotiable for the perfect texture. Don’t skip the salt—it enhances the flavors. Use room temperature ingredients for easier mixing. The oats will keep in the fridge for up to 5 days.
