This creamy Crockpot White Chicken Chili is the ultimate game day meal. It’s set-it-and-forget-it easy, packed with bold flavor from tender chicken, white beans, and green chiles, and gets its luscious texture from a smart bean-blending trick.

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) Great Northern beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 2 cans (4 oz each) diced green chiles
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • 1 can (15 oz) corn, drained (or 1.5 cups frozen corn)
  • 1/2 cup heavy cream or half-and-half
  • Fresh cilantro for garnish
  • Optional toppings: shredded Monterey Jack cheese, sliced avocado, lime wedges, tortilla chips, sour cream

Instructions

  1. Dice the onion and mince the garlic.
  2. Place the chicken breasts in the bottom of a 6-quart or larger slow cooker. Top with the diced onion, minced garlic, drained Great Northern beans, and diced green chiles. Do not stir.
  3. Sprinkle the ground cumin, dried oregano, chili powder, salt, and pepper over the top.
  4. Pour the chicken broth over everything. Gently stir to combine the spices into the liquid.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is fork-tender.
  6. Carefully remove the chicken breasts to a cutting board and shred with two forks.
  7. Using an immersion blender, blend about 1 to 1.5 cups of the beans and some broth directly in the slow cooker until smooth. (Alternatively, transfer the mixture to a standard blender, blend until smooth, and return to the pot.)
  8. Stir the shredded chicken and drained corn back into the pot.
  9. Pour in the heavy cream or half-and-half and stir gently. Let cook for another 10-15 minutes on LOW.
  10. Taste and adjust seasoning with salt, pepper, or a squeeze of lime juice if needed.
  11. Ladle into bowls and serve with desired toppings.

Notes

For the best texture, cook on LOW. The bean-blending step is key for creaminess without extra cream. This chili tastes even better the next day. To make it dairy-free, use full-fat coconut milk instead of heavy cream. For a thicker chili, blend more beans or add a cornstarch slurry.
