This creamy crockpot white chicken chili is a family favorite that turns even the biggest skeptics into fans. With simple, budget-friendly ingredients and a set-it-and-forget-it method, it’s the perfect cozy meal for busy weeknights.

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) Great Northern or cannellini beans, drained and rinsed
  • 2 cans (4 oz each) diced green chiles
  • 8 oz cream cheese, softened and cut into cubes
  • 4 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Optional toppings: fresh cilantro, shredded Monterey Jack cheese, diced avocado, sour cream, tortilla chips, lime juice

Instructions

  1. Prep your ingredients: dice the onion, mince the garlic, drain and rinse the beans, and measure out the spices.
  2. Place the chicken breasts in the bottom of a 6-quart crockpot. Scatter the diced onion and minced garlic over the chicken. Add the drained beans and green chiles (with their liquid). Sprinkle the cumin, oregano, chili powder, salt, and pepper over everything.
  3. Pour the chicken broth over the top. Do not stir.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is tender and shreds easily.
  5. About 30 minutes before serving, remove the chicken breasts from the crockpot and shred with two forks. Return the shredded chicken to the crockpot.
  6. Add the cubed cream cheese to the crockpot and stir gently until fully melted and incorporated.
  7. Let the chili simmer for another 15-20 minutes on LOW. Taste and adjust seasoning if needed.
  8. Ladle into bowls and serve with desired toppings.

Notes

For a thicker chili, blend 1 cup of the cooked chili (before adding cream cheese) and stir back in. Always add cream cheese at the end to prevent curdling. Leftovers keep in the fridge for up to 5 days or freeze for up to 3 months.
