  • 1 medium yellow onion, diced
  • 3 large garlic cloves, minced
  • 28 oz can crushed tomatoes (preferably San Marzano)
  • 4 cups low sodium chicken broth

  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • 8 oz lasagna noodles, broken into bite-sized pieces
  • 1 cup cottage cheese, blended smooth
  • 1 ½ cups shredded mozzarella cheese, plus extra for topping
  • ½ cup freshly grated Parmesan cheese
  • ½ cup fresh basil leaves, thinly sliced
  • Salt and freshly ground black pepper, to taste
  • Red pepper flakes, optional pinch

Instructions

  1. Heat a large skillet over medium-high heat and crumble the Italian sausage into the pan. Cook until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
  2. In the same skillet, add diced onion and cook for 3-4 minutes until translucent. Add minced garlic and cook for another 30 seconds until fragrant, being careful not to burn the garlic.
  3. Transfer the browned sausage, onion, and garlic to the crockpot. Add crushed tomatoes, chicken broth, tomato paste, and dried Italian herbs. Stir gently to combine.
  4. Season with salt, pepper, and red pepper flakes if using. Cover and cook on low for 5-6 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, stir in broken lasagna noodles. Cover and cook until noodles are tender, about 20-30 minutes. While noodles cook, blend the cottage cheese until creamy.
  6. Once noodles are tender, stir in the blended cottage cheese, shredded mozzarella, and grated Parmesan. Mix until cheese melts into the soup. Adjust seasoning to taste.
  7. Just before serving, stir in the sliced fresh basil leaves. Ladle into bowls and top with extra mozzarella or Parmesan if desired.
