This creamy buffalo chicken dip with cream cheese and ranch is a crowd-pleasing, easy-to-make appetizer perfect for game day, potlucks, or any gathering. It’s made with simple pantry ingredients and comes together in minutes.

Ingredients

Scale
  • 16 oz cream cheese, softened
  • 3 cups cooked chicken, shredded
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup ranch dressing
  • 1 1/2 cups shredded cheddar cheese, divided
  • Optional: Worcestershire sauce, garlic powder, onion powder, butter

Instructions

  1. Prep the chicken: If using rotisserie chicken, remove skin and shred meat into small pieces. If using raw chicken breasts, boil in water for 15-20 minutes until cooked through, then shred with two forks.
  2. Soften the cream cheese: Remove from fridge 30 minutes before starting, or microwave in 10-second bursts until soft.
  3. Combine the base: In a large bowl, beat softened cream cheese with a hand mixer until smooth. Add ranch dressing and buffalo sauce; mix until well combined.
  4. Add chicken and cheese: Fold in shredded chicken and 1 cup of shredded cheddar cheese until evenly distributed.
  5. Transfer to cooking vessel: Spray slow cooker insert or baking dish with non-stick spray. Spread mixture evenly.
  6. Top with remaining cheese: Sprinkle remaining 1/2 cup cheddar cheese over the top.
  7. Cook until bubbly: For slow cooker, cook on low for 2-3 hours or high for 1-2 hours. For oven, bake at 350°F (175°C) for 20-25 minutes until hot and bubbly.
  8. Rest and serve: Let dip sit for 5-10 minutes before serving. Stir before serving.

Notes

Don’t overcook to prevent separation. Use room temperature cream cheese for smooth texture. Shred your own cheese for best melting. Taste and adjust heat before adding chicken. Keep warm in slow cooker on ‘warm’ setting for serving.
