  • 2 tablespoons olive oil, divided
  • Salt and black pepper, to taste
  • 2 tablespoons maple syrup or honey
  • 1 small yellow onion, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 pound ground turkey or beef (93% lean turkey recommended)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (14.5 oz) diced tomatoes, drained (fire-roasted preferred)
  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend, optional)
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Using a sharp chef’s knife, carefully cut each acorn squash in half from stem to tip. Scoop out the seeds and stringy pulp with a large spoon.
  3. Brush the cut sides and cavities of the squash with 1 tablespoon olive oil. Sprinkle with salt and pepper. Drizzle about 1/2 tablespoon of maple syrup into each cavity. Place the squash halves cut-side down on the prepared baking sheet. Roast for 25 minutes.
  4. While the squash roasts, heat 1 tablespoon olive oil in a large skillet over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Add the ground turkey or beef to the skillet. Break it up with a wooden spoon and cook until browned, about 6-8 minutes. Drain excess fat if needed.
  6. Sprinkle the smoked paprika, cumin, cinnamon, salt, and pepper over the meat. Stir well and cook for about 1 minute to bloom the spices.
  7. Stir in the drained diced tomatoes and cooked rice. Reduce heat to low and let simmer for 3-4 minutes, stirring occasionally. Taste and adjust salt if needed.
  8. Carefully flip the par-roasted squash halves over so they are cut-side up. Spoon the filling generously into each cavity, mounding it up. If using cheese, sprinkle it on top.
  9. Return the baking sheet to the oven and bake for another 20-25 minutes, until the squash is fork-tender and the filling is heated through. For a golden top, broil for the last 2 minutes.
  10. Let the stuffed squash rest for 5 minutes before serving. Garnish with fresh parsley or cilantro if desired.

For a vegetarian version, swap ground meat for 1 can of black beans (drained and rinsed) plus 1/2 cup corn. For a low-carb option, use cauliflower rice. The maple syrup is key for caramelizing the squash; honey or brown sugar can be substituted. Par-roasting the squash is essential to ensure even cooking. Drain canned tomatoes well to avoid a soggy filling. Leftover rice works best as it is drier and absorbs flavors better.
