These Cozy Spider Cookies with Chocolate Cookie Crunch are a fun and easy Halloween treat featuring a soft, chewy chocolate cookie with a hidden layer of crunchy chocolate cookie crumb, decorated with chocolate legs and candy eyes.

  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup chocolate sandwich cookies, crushed (about 8–10 cookies)
  • 2 tablespoons melted butter
  • ¼ cup chocolate chips, melted
  • 24 candy eyes

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add to the wet mixture, mixing on low speed until just combined.
  5. In a small bowl, combine the crushed chocolate sandwich cookies and melted butter until the crumbs are evenly coated.
  6. Scoop about 1 tablespoon of dough, roll into a ball, and flatten slightly. Press about 1 teaspoon of the cookie crunch mixture into the center, then fold the edges over to seal. Roll back into a ball and place on the prepared baking sheet. Repeat with remaining dough, spacing balls about 2 inches apart.
  7. Bake for 10-12 minutes, until the cookies are puffy and set around the edges. Let rest on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  8. Once cookies are completely cool, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between. Transfer to a piping bag or zip-top bag with a tiny corner snipped off. Pipe four small legs on each side of each cookie (eight legs total). While the chocolate is still wet, press two candy eyes into the center of each spider body. Let the chocolate set for about 15 minutes at room temperature, or refrigerate for 5 minutes.

Notes

If the dough feels too soft, chill for 15 minutes before scooping. Crush cookies evenly for best texture. Ensure the filling is fully sealed to prevent leaking. Let cookies cool completely before decorating to prevent chocolate from melting.
