This cozy slow cooker lasagna soup is a comforting, set-it-and-forget-it meal that delivers all the flavors of classic lasagna without the fuss. Perfect for busy weeknights or lazy Sundays, it features a rich tomato broth, tender lasagna noodles, and a creamy ricotta finish.

  • 1 pound ground beef (80/20 preferred)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • 6 cups low-sodium chicken or beef broth
  • 1 can (28 ounces) crushed tomatoes (San Marzano preferred)
  • 1 can (15 ounces) tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon balsamic vinegar
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 1 cup ricotta cheese (whole milk)
  • ½ cup grated Parmesan cheese (freshly grated)
  • 2 cups shredded mozzarella cheese
  • ¼ cup fresh parsley or basil, chopped

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned (6-8 minutes). Drain excess fat if needed.
  2. Add diced onion to the skillet and cook for 2 minutes until softened. Stir in minced garlic, salt, pepper, oregano, basil, and red pepper flakes; cook for 30 seconds until fragrant.
  3. Transfer the meat mixture to a 6-quart or larger slow cooker. Add crushed tomatoes, tomato sauce, tomato paste, balsamic vinegar, and broth. Stir to combine.
  4. Cover and cook on low for 5-6 hours or on high for 3-4 hours. About 30 minutes before serving, stir in broken lasagna noodles, ensuring they are submerged. Cover and cook on high for 30 minutes until pasta is tender.
  5. In a small bowl, mix ricotta, half the Parmesan, and a pinch of salt and pepper. Set aside.
  6. When pasta is done, stir in 1 cup shredded mozzarella until melted.
  7. Ladle soup into bowls. Top each with a dollop of ricotta mixture, remaining mozzarella, remaining Parmesan, and fresh parsley or basil.

Notes

Don’t add pasta too early to avoid mushiness. Break noodles into uniform 2-inch pieces. Taste and adjust seasoning before serving. For deeper flavor, toast tomato paste with meat. Let soup rest 5 minutes after cooking. Leftovers thicken; add broth when reheating. Freeze soup base without pasta for best results.
