  • 4–5 medium Yukon Gold potatoes, thinly sliced (about 1/8-inch thick)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup beef broth
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prep your ingredients: Thinly slice the potatoes (about 1/8-inch thick). Dice the onion and mince the garlic. Shred the cheddar cheese if you’re doing it yourself.
  2. Layer the bottom of the slow cooker: Start with a thin layer of potatoes on the bottom. Season with a pinch of salt and pepper.
  3. Add the ground beef: Crumble about one-third of the raw ground beef over the potatoes. Top with some diced onion and minced garlic.
  4. Add the tomatoes and spices: Spoon a few tablespoons of the diced tomatoes over the beef. Sprinkle a little thyme and smoked paprika over that layer.
  5. Repeat the layers: Add another layer of potatoes, then beef, onion, garlic, tomatoes, and spices. Repeat until you’ve used all the ingredients, ending with a final layer of potatoes on top. You should have about 3-4 layers total.
  6. Pour in the broth: Slowly pour the beef broth around the edges of the slow cooker.
  7. Cook low and slow: Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours, until potatoes are fork-tender and beef is cooked through.
  8. Add the cheese: About 30 minutes before serving, sprinkle the shredded cheddar cheese evenly over the top. Cover and let it melt until bubbly and golden.
  9. Rest and serve: Let the casserole sit, uncovered, for about 10 minutes. Garnish with fresh parsley and serve hot.

Notes

For a richer flavor, brown the beef in a skillet before adding. If your slow cooker runs hot, start with 1/3 cup broth and add more if needed. Letting the casserole rest for 10 minutes after cooking helps it set and makes serving easier.
