  • 1 small head green cabbage, cut into 6 wedges (core intact)
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns

Instructions

  1. Prepare the brisket: Remove corned beef from packaging, discard liquid, rinse under cold water, and pat dry. Set spice packet aside.
  2. Layer the vegetables: Place quartered onion, carrot chunks, and potato pieces in the bottom of a 6-quart or larger slow cooker.
  3. Add the brisket: Place brisket on top of vegetables, fat side up. If too long, cut in half and stack.
  4. Season and add liquid: Sprinkle spice packet over brisket. Add bay leaves and peppercorns. Pour in 4 cups water (should come halfway up brisket sides).
  5. Cook low and slow: Cover and cook on LOW for 8-10 hours or HIGH for 4-5 hours, until brisket is fork-tender.
  6. Add the cabbage: About 1 hour before serving, add cabbage wedges, nestling them into the liquid. Cover and continue cooking on LOW.
  7. Rest and slice: When cabbage is tender, transfer brisket to a cutting board. Let rest 10-15 minutes before slicing against the grain into 1/4-inch thick slices.
  8. Serve: Arrange sliced brisket on a platter with vegetables and cabbage. Spoon cooking liquid over everything. Garnish with parsley if desired.
