This warm, fragrant slow cooker apple cider sangria is the perfect fall drink—easy to make, full of seasonal flavors, and ideal for gatherings. Just toss everything in the crockpot and let it do its thing.

  • 4 cups (960 ml) apple cider
  • 1 bottle (750 ml) dry red wine (e.g., Merlot or Zinfandel)
  • ½ cup (120 ml) apple brandy or bourbon (optional)
  • ¼ cup (60 ml) honey or maple syrup
  • 3 whole cinnamon sticks
  • 56 whole cloves
  • 2 whole star anise pods
  • 3 thin slices fresh ginger (peeled)
  • 2 medium apples (Honeycrisp or Fuji), cored and sliced into thin rounds
  • 1 large orange, sliced into rounds and quartered
  • 1 medium pear (Bosc or Bartlett), sliced
  • ½ cup pomegranate seeds (optional)

Instructions

  1. Prep the fruit: Wash and slice apples, pears, and orange. Leave peels on. Remove seeds from apple and pear slices. If using pomegranate seeds, pop them out. Set aside.
  2. Combine liquids: Pour apple cider, red wine, and brandy (if using) into a 6-7 quart slow cooker. Stir gently with a wooden spoon.
  3. Add sweetener and spices: Drizzle in honey or maple syrup. Add cinnamon sticks, cloves, star anise, and ginger slices. Stir gently.
  4. Add fruit: Gently place sliced fruit into slow cooker, submerging as much as possible.
  5. Cook on low: Set slow cooker to low and cook for 3-4 hours. Do not rush. After 2 hours, stir gently.
  6. Taste and adjust: After 3 hours, taste. Add more honey if needed, more wine if too sweet, or let cook another 30 minutes for more spice.
  7. Serve warm: Ladle into mugs, including some fruit in each serving.

Notes

Don’t cook on high; low and slow is key. Toast spices in a dry pan for 30 seconds for extra aroma. Can be made ahead and reheated. For non-alcoholic version, replace wine with 4 more cups apple cider and skip brandy; add a splash of apple cider vinegar for acidity. Leftovers keep in fridge up to 5 days; freeze up to 3 months.
