Cozy Sausage and White Bean Soup: The Best One-Pot Meal

A rich, savory one-pot soup with browned Italian sausage, creamy cannellini beans, and tender kale in a garlicky broth. Perfect for chilly nights, this comforting meal comes together in under an hour and tastes even better the next day.

Ingredients

  • 1 large yellow onion, diced (about 1½ cups)
  • 4 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried rosemary
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 pound mild Italian sausage, casings removed
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes (fire-roasted preferred)
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 3 cups fresh kale, stems removed and roughly chopped
  • 1 tablespoon fresh lemon juice
  • ¼ cup fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Add sausage, breaking it apart with a wooden spoon. Cook until deeply browned, about 6-8 minutes. Transfer sausage to a plate, leaving rendered fat in the pot (spoon off excess if more than 2 tablespoons).
  2. Reduce heat to medium. Add onion, carrots, and celery. Cook, stirring occasionally, until softened and onion is translucent, about 5-7 minutes. Add garlic, oregano, rosemary, and red pepper flakes; cook 1 minute until fragrant.
  3. Pour in about ½ cup chicken broth and scrape up browned bits from the bottom of the pot. Let bubble for 30 seconds until slightly reduced.
  4. Add remaining broth, water, diced tomatoes (with juices), and drained cannellini beans. Stir, then return sausage to pot. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 20 minutes.
  5. Stir in chopped kale and let wilt, about 3-4 minutes (1 minute if using spinach). Taste and adjust seasoning with salt and pepper.
  6. Remove pot from heat and stir in fresh lemon juice.
  7. Ladle soup into bowls. Garnish with fresh parsley and grated Parmesan. Serve with crusty bread.

Notes

For a thicker soup, mash about ½ cup of beans against the side of the pot before adding. The soup improves after a day in the fridge. Add kale and lemon just before serving if making ahead. To prevent oversalting, taste before adding salt at the end. For a vegetarian version, skip sausage and use 2 cans of beans plus mushrooms; use vegetable broth.
