  • ½ cup pecans (60g), roughly chopped
  • 1 tbsp butter or coconut oil (for toasting pecans)

Instructions

  1. Brew the chai tea: Bring 1 cup (240ml) of water to a boil, then steep the 2 chai tea bags for 5-7 minutes until strong and fragrant. Remove the bags and let the tea cool slightly.
  2. Toast the pecans: In a small skillet, melt 1 tbsp of butter or coconut oil over medium heat. Add the chopped pecans and 1 tbsp of maple syrup. Stir frequently for 3-4 minutes until pecans are glossy and fragrant. Remove from heat and set aside to cool.
  3. Mix the oats: In a medium bowl or jar, combine 1 cup (90g) rolled oats, ½ cup (120g) pumpkin puree, the brewed chai tea, and 1 cup (240ml) milk of choice.
  4. Add spices and flavor: Stir in 1 tsp ground cinnamon, ½ tsp ground ginger, ¼ tsp ground cardamom (if using), 1 tsp vanilla extract, a pinch of salt, and 2 tbsp maple syrup. Mix well so spices are evenly distributed and pumpkin is fully incorporated.
  5. Refrigerate overnight: Cover the bowl or jar tightly and place it in the refrigerator for at least 6 hours or overnight.
  6. Serve: In the morning, stir the oats well. Add a splash of milk if too thick. Top with the maple-glazed pecans.
  7. Optional garnishes: Sprinkle extra cinnamon, drizzle more maple syrup, or add a dollop of Greek yogurt for creaminess and protein boost.
