Cozy Pecan Pie Cobbler: Easy Dessert with Ice Cream

This Cozy Pecan Pie Cobbler with Vanilla Ice Cream has all the classic pecan pie flavor without the stress of making pastry. The cobbler topping bakes underneath the filling, creating an incredible texture contrast—crisp and cakey on top, soft and custard-like underneath.

  • 1 cup (240ml) light corn syrup
  • 3 large eggs, room temperature
  • 1/4 cup (60g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups (170g) pecan halves
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) whole milk
  • 1/4 cup (60g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or non-stick spray. Place the dish on a baking sheet.
  2. In a medium mixing bowl, whisk together 1 cup all-purpose flour, 1/2 cup granulated sugar, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt.
  3. In a separate small bowl, combine 1/2 cup whole milk, 1/4 cup melted unsalted butter, and 1 teaspoon vanilla extract. Pour into the dry ingredients and stir with a spatula until just combined (a few lumps are fine). Spread the batter evenly into the prepared baking dish.
  4. In a large mixing bowl, whisk together 1 cup packed light brown sugar, 1 cup light corn syrup, 3 room-temperature eggs, 1/4 cup melted unsalted butter, 1 teaspoon vanilla extract, and 1/4 teaspoon salt until smooth. Gently fold in 1 1/2 cups pecan halves.
  5. Carefully pour the pecan pie filling over the cobbler batter in the baking dish. Do not stir.
  6. Bake for 40-45 minutes, until the cobbler topping is golden brown and the filling is set around the edges but still slightly jiggly in the center. A toothpick inserted into the cobbler topping should come out clean.
  7. Remove from the oven and let cool on a wire rack for at least 15 minutes. Serve warm with a generous scoop of vanilla ice cream.

Notes

Toast pecans first for best flavor. Use room temperature eggs. Don’t overmix the topping. Let the cobbler rest for 15 minutes before serving. The cobbler tastes even better the next day.
