Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine sliced peaches with 1/4 cup brown sugar, grated fresh ginger, lemon juice, vanilla extract, cinnamon, and a pinch of salt. Toss gently to coat evenly and let sit while preparing the topping.
  3. In a separate bowl, mix oats, flour, remaining 1/4 cup brown sugar, and cinnamon. Add cold diced butter and use a pastry cutter or fingertips to work butter into dry ingredients until mixture resembles coarse crumbs.
  4. Pour peach mixture into a prepared 8×8-inch baking dish, spreading evenly. Sprinkle oat streusel topping generously over peaches.
  5. Bake for 40-45 minutes until topping is golden brown and peach filling is bubbling around edges.
  6. Let cool for at least 15 minutes before serving to allow juices to thicken and topping to set.
