Cozy One-Pot Lasagna Soup with Ricotta Swirl

This cozy one-pot lasagna soup with ricotta swirl gives you all the rich, meaty, cheesy goodness of traditional lasagna without the fuss. Ready in 40 minutes, it’s the perfect comfort meal for chilly nights.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or sweet, casings removed)
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (28 ounces) crushed tomatoes (preferably San Marzano)
  • 4 cups low-sodium chicken broth (or vegetable broth)
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 1 cup whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh basil, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the Italian sausage (casings removed) and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5 to 7 minutes. Do not drain the fat.
  2. Add the onion and cook for 3 to 4 minutes, until softened and translucent. Stir occasionally.
  3. Stir in the garlic, oregano, and red pepper flakes (if using). Cook for 30 seconds until fragrant.
  4. Pour in the crushed tomatoes and chicken broth. Stir everything together, scraping up any browned bits from the bottom of the pot.
  5. Bring the soup to a boil, then reduce the heat to a simmer. Let it cook for 10 minutes, stirring occasionally.
  6. Add the broken lasagna noodles to the pot. Stir well so they are submerged. Cook for 10 to 12 minutes, stirring every few minutes, until the noodles are tender but still al dente.
  7. Taste the broth and adjust seasoning with salt and pepper.
  8. Remove the pot from the heat. In a small bowl, stir together the ricotta cheese and 1/4 cup of the Parmesan cheese.
  9. Ladle the soup into bowls. Drop a generous spoonful of the ricotta mixture into the center of each bowl. Gently swirl it into the soup with the back of a spoon.
  10. Sprinkle with fresh basil and extra Parmesan cheese. Serve immediately.

Notes

The soup will thicken as it sits because the noodles continue to absorb liquid. If making ahead, undercook the noodles slightly, or add a splash of broth when reheating. For best results, swirl the ricotta into individual bowls rather than adding it to the pot to avoid curdling.
