  • 12 small pre-cooked sausage links (or 6 large links cut in half)
  • 1 large egg
  • 1 tablespoon water
  • Mustard or ketchup (for the eyes)
  • Flour (for dusting)
  • Salt (a pinch for finishing)
  • Optional: Everything bagel seasoning

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lightly flour your work surface. Unfold one sheet of puff pastry and gently roll it out just slightly to smooth the creases, aiming for about 1/8 inch thickness.
  3. Using a sharp knife or pizza cutter, cut the pastry into long strips about 1/2 inch wide. Each sheet should yield about 8-10 strips.
  4. Take one sausage link and place it at one end of a pastry strip. Gently wrap the strip around the sausage, slightly overlapping as you go, leaving a small gap near the top for the ‘face.’ Leave about 1/4 inch of the sausage exposed at the top and bottom.
  5. Place each wrapped mummy on the prepared baking sheet, seam side down, leaving about an inch of space between each one.
  6. In a small bowl, whisk together the egg and water until smooth. Using a pastry brush, gently brush each mummy with the egg wash.
  7. Bake for 12-15 minutes, or until the pastry is golden brown and puffed.
  8. Remove from the oven and let cool for 2-3 minutes. While still warm, use a toothpick to dab a tiny dot of mustard or ketchup onto the exposed part of the sausage for eyes.
  9. Sprinkle a tiny pinch of flaky salt over the warm mummies if desired. Let cool for another 2-3 minutes before serving.

Keep the pastry cold for best flakiness. Use pre-cooked sausages to avoid sogginess. Assemble up to a day in advance and refrigerate. Freeze unbaked mummies for up to a month. For gluten-free, use gluten-free puff pastry and sausages. For dairy-free, use vegan puff pastry.
