Savory pork chops are seared and then braised in a sticky maple glaze with roasted apples. This quick and easy recipe delivers a comforting, crowd-pleasing meal that feels special but comes together in about 45 minutes.

  • 4 bone-in pork chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • 2 medium firm apples (such as Honeycrisp or Granny Smith), cored and cut into 8 wedges each
  • ½ cup pure maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 sprigs fresh rosemary (or 1 teaspoon dried)
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, and garlic powder. Let them sit at room temperature for 10-15 minutes while you prep the apples.
  2. Heat the olive oil in a large skillet over medium-high heat until it shimmers. Carefully lay the pork chops in the pan. Cook for 4-5 minutes without moving them, until the underside is a deep golden brown. Flip with tongs and cook for another 3-4 minutes. The internal temperature should be around 130°F (54°C). Transfer the chops to a plate and tent loosely with foil.
  3. Reduce the heat to medium. Add the apple wedges to the same pan, cut-side down. Cook for 2-3 minutes until they start to caramelize. Add the minced garlic and rosemary sprigs, stirring for about 30 seconds until fragrant.
  4. Pour in the maple syrup, apple cider vinegar, and Dijon mustard. Stir with a wooden spoon, scraping up the browned bits from the bottom of the pan. Let the mixture come to a gentle simmer.
  5. Nestle the pork chops back into the skillet, tucking them in among the apples. Spoon some of the glaze over the tops of the chops. Reduce the heat to low, cover the pan, and cook for 8-10 minutes. The pork should reach an internal temperature of 145°F (63°C). The apples will soften but still hold their shape.
  6. Remove the pan from the heat. Add the unsalted butter and swirl the pan until it melts into the glaze. Taste and adjust seasoning with a pinch more salt or a splash more vinegar if needed.
  7. Let the pork chops rest in the pan for 5 minutes before serving. Serve the chops with the roasted apples and spoon plenty of glaze over the top.

For boneless pork chops, reduce cooking time by 2-3 minutes. Use a meat thermometer to ensure pork reaches 145°F (63°C). Let the pork rest for 5 minutes before serving. The glaze can be made ahead and stored separately. Leftovers keep in the fridge for up to 3 days.
