These honey roasted pumpkin seeds with cinnamon are a quick, easy, and delicious snack made with simple pantry ingredients. Perfect for cozy evenings, parties, or last-minute gifts, they offer a crunchy, sweet, and spiced treat that everyone loves.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds (about 120g), rinsed and patted dry
  • 2 tablespoons honey (30ml)
  • 1 tablespoon unsalted butter (14g), melted
  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher salt, plus more for sprinkling
  • ½ teaspoon vanilla extract (optional)
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Clean the pumpkin seeds: Separate seeds from pumpkin guts, rinse in a colander under cool water, and remove any stringy bits.
  3. Dry the seeds thoroughly: Spread them on a paper towel or clean kitchen towel and pat dry. Let them air dry for about 5 minutes.
  4. Make the honey mixture: In a mixing bowl, combine melted butter, honey, cinnamon, salt, vanilla extract (if using), and nutmeg (if using). Stir until well combined.
  5. Coat the seeds: Add the dried pumpkin seeds to the bowl and stir until every seed is coated.
  6. Spread the seeds on the baking sheet in a single layer, as evenly as possible.
  7. Bake for 20-25 minutes, stirring halfway through. After 10 minutes, stir the seeds, then return to the oven for another 10-15 minutes until golden brown and fragrant.
  8. Cool completely on the baking sheet for 15-20 minutes. The seeds will become crunchy as they cool.
  9. Sprinkle with a pinch of salt while still warm.

Notes

For best results, dry seeds thoroughly before coating. Bake at 300°F to prevent honey from burning. Stir halfway through. Cool completely for crunchiness. Seeds can be stored in an airtight container at room temperature for up to 2 weeks. They also freeze well for up to 3 months.
