  • 10 cups popped plain popcorn (about 1/2 cup unpopped kernels, or two 3-ounce bags of microwave popcorn, popped and unbuttered)
  • 2 cups mini pretzel twists
  • 1 cup salted peanuts (optional)
  • 1/2 cup unsalted butter
  • 1/2 cup light brown sugar, packed
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda
  • Pinch of sea salt
  • 1 cup candy corn
  • 1/2 cup candy pumpkin pieces
  • 1/2 cup chocolate-covered pretzels or mini chocolate candies (like M&M’s in Halloween colors)

Instructions

  1. Preheat your oven to 250°F (120°C). Line a large rimmed baking sheet with parchment paper or a silicone mat.
  2. Pop your popcorn and pick out any unpopped kernels. Place the popped popcorn in your largest mixing bowl. Add the mini pretzels and peanuts (if using). Toss gently to combine. Set aside.
  3. In a medium saucepan over medium heat, melt the butter. Add the brown sugar and corn syrup, stirring constantly until the mixture comes to a gentle boil. Let it boil for 1 minute without stirring.
  4. Remove from heat and stir in the vanilla, cinnamon, and baking soda. Be careful—the baking soda will make the mixture foam up a bit. Stir until everything is smooth and combined.
  5. Pour the hot coating over the popcorn mixture. Drizzle it evenly as you go. Use a silicone spatula to scrape every last drop out of the saucepan. Gently fold the coating into the popcorn, pretzels, and peanuts. Work quickly before the coating starts to set.
  6. Spread the mixture onto the prepared baking sheet in an even layer. Don’t press it down too hard. Sprinkle the sea salt evenly over the top.
  7. Bake for 15 minutes, stirring once halfway through. Remove from the oven and let it cool completely on the baking sheet.
  8. Once completely cool, transfer to a large bowl and add the candy corn, candy pumpkins, and chocolate-covered pretzels or chocolate candies. Toss gently to combine.
  9. Serve immediately or store in an airtight container.

Notes

Let the popcorn mixture cool completely before adding candy to prevent melting. For best results, use fresh air-popped popcorn and avoid butter-flavored microwave popcorn. The mix tastes even better the next day after flavors meld. Store in an airtight container at room temperature for up to 1 week.
