  • 1/2 cup water
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add sliced sausage in a single layer and cook for 3-4 minutes until edges are crispy and golden. Transfer sausage to a plate and set aside, leaving rendered fat in the pot.
  2. Reduce heat to medium. Add diced onion and cook for 2 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add diced potatoes and 1/2 cup water to the pot. Stir, cover, and let steam for 4-5 minutes until potatoes are slightly translucent around edges.
  4. Sprinkle flour, smoked paprika, thyme, salt, and pepper over potatoes. Stir constantly for 1 minute. Slowly pour in chicken broth while whisking vigorously. Add milk and whisk until smooth. Bring to a gentle simmer.
  5. Reduce heat to medium-low and simmer uncovered for 12-15 minutes, stirring occasionally, until potatoes are fork-tender and soup has thickened.
  6. Return browned sausage to the pot. Stir in shredded cheddar cheese until melted and smooth. Adjust seasoning to taste. Ladle into bowls and top with sour cream, crumbled bacon, and sliced green onions. Serve immediately.

Notes

For a dairy-free version, use unsweetened oat milk and dairy-free cheese. To prevent curdling, keep heat at a gentle simmer after adding dairy. If soup is too thick, add a splash of broth or milk. For extra thickness, mash a few potato cubes against the pot.
