Cozy Crockpot White Chicken Chili with Green Chiles – Easy 30-Minute Dinner

This creamy, mildly spicy white chicken chili is made in the slow cooker with tender chicken, white beans, and green chiles. It’s the ultimate comfort food for busy weeknights or cozy evenings.

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans (Great Northern or cannellini), drained and rinsed
  • 2 cans (4 oz each) diced green chiles
  • 3 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper
  • 4 oz cream cheese, softened
  • ½ cup heavy cream
  • ¼ cup fresh cilantro, chopped (for garnish)
  • Juice of 1 lime

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker. Sprinkle the diced onion and minced garlic over the top.
  2. In a small bowl, combine the cumin, oregano, chili powder, salt, and pepper. Sprinkle this spice mixture evenly over the chicken and onions. Pour in the chicken broth. Add the drained white beans and diced green chiles. Stir gently to combine.
  3. Cover and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the chicken is fork-tender.
  4. Carefully remove the chicken from the slow cooker using tongs. Place on a cutting board and shred with two forks. Return the shredded chicken to the slow cooker.
  5. In a small bowl, soften the cream cheese in the microwave for 15 to 20 seconds. Add the softened cream cheese and heavy cream to the slow cooker. Stir until the cream cheese is completely melted and the broth is smooth and creamy (about 2 to 3 minutes).
  6. Squeeze the juice of one lime into the chili and stir. Taste and adjust salt and pepper if needed.
  7. Ladle the chili into bowls and garnish with fresh cilantro. Serve with optional toppings like crushed tortilla chips, shredded cheese, or sliced avocado.

Notes

For a dairy-free version, use full-fat coconut milk instead of heavy cream and omit the cream cheese. For a spicier chili, use hot diced green chiles and add a chopped jalapeño. To thicken the chili, let it cook uncovered on HIGH for an additional 15 to 20 minutes, or mash some beans against the side of the pot.
