This Crockpot Honey Garlic Chicken Thighs recipe is proof that you don’t need a long ingredient list or hours of active cooking to make something truly special. It’s the kind of dish that feels like a warm hug on a cold day—simple, comforting, and absolutely delicious.

Ingredients

Scale
  • 2 lbs (900g) boneless, skinless chicken thighs
  • 1/2 cup (170g) honey
  • 1/2 cup (120ml) low-sodium soy sauce
  • 4–5 cloves garlic, minced
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for slurry)
  • Sesame seeds, sliced green onions, or red pepper flakes (optional garnishes)

Instructions

  1. Pat the chicken thighs dry with paper towels. Trim excess fat if desired. Arrange in a single layer in the slow cooker.
  2. In a small bowl, whisk together honey, low-sodium soy sauce, and minced garlic. Pour evenly over the chicken.
  3. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until chicken reaches an internal temperature of 165°F (74°C) and shreds easily.
  4. Optional: About 15 minutes before serving, remove chicken with tongs. In a small bowl, whisk cornstarch with cold water until smooth. Pour into slow cooker, stir, and cook on HIGH for 10-15 minutes until thickened. Return chicken and toss to coat.
  5. Serve hot over rice, quinoa, or vegetables. Garnish with sesame seeds, green onions, or red pepper flakes if desired.

Notes

For best results, pat chicken dry and use low-sodium soy sauce. Thicken sauce with cornstarch slurry for a glossier finish. Leftovers keep in the fridge for up to 4 days or freeze for up to 3 months.
