Cozy Crockpot Green Beans with Bacon & Onion

Tender, smoky green beans slow-cooked with crispy bacon and caramelized onions. A set-it-and-forget-it side dish that converts even the most stubborn green bean haters.

  • 1.5 pounds (680 grams) fresh green beans, trimmed
  • 8 slices (about 8 ounces / 225 grams) thick-cut bacon, chopped
  • 1 large yellow onion (about 10 ounces / 280 grams), thinly sliced
  • 1 cup (240 ml) low-sodium chicken broth
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1 tablespoon (12 grams) brown sugar
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Instructions

  1. Cook the bacon: Place chopped bacon in a large skillet over medium heat. Cook for 4 to 5 minutes, stirring occasionally, until crispy. Transfer bacon to a paper towel-lined plate, leaving rendered fat in the skillet.
  2. Caramelize the onions: Add sliced onion to the same skillet with bacon fat. Cook over medium heat, stirring every minute, until soft and golden brown (6 to 8 minutes). Add minced garlic in the last minute and cook until fragrant (about 30 seconds).
  3. Prepare the green beans: Rinse green beans and trim off stem ends. Optionally cut in half, but leaving whole is preferred.
  4. Layer in slow cooker: Place trimmed green beans in the bottom of a 4 to 6 quart slow cooker. Top with caramelized onions and garlic, then sprinkle cooked bacon pieces over everything.
  5. Add liquid ingredients: In a small bowl, whisk together chicken broth, apple cider vinegar, and brown sugar until sugar dissolves. Pour evenly over the beans, bacon, and onions. Gently stir to combine.
  6. Slow cook: Cover and cook on low for 3 to 4 hours. Check at 3 hours for tenderness (fork-tender but not mushy). If using high, cook for about 2 hours.
  7. Season and serve: Taste and add salt and pepper as needed. Transfer to a serving dish, garnish with fresh parsley if desired, and serve hot with a slotted spoon.

Notes

Don’t lift the lid during the first 2 hours of cooking. If your slow cooker runs hot, start checking at 2.5 hours. For a make-ahead option, cook bacon and onions the night before and refrigerate. To double the recipe, use two slow cookers or cook in batches to avoid overcrowding.
