Instructions

  1. Sauté the aromatics: In a large skillet, melt the butter over medium heat. Add the diced onion and cook until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
  2. Make the roux: Sprinkle the flour over the onions and garlic. Stir constantly for about 1-2 minutes until the flour is fully incorporated and turns a light golden color.
  3. Deglaze the pan: Slowly pour in about 1/2 cup of the broth while stirring. Scrape up any brown bits from the bottom of the pan.
  4. Transfer to the crockpot: Pour the onion mixture into your crockpot. Add the remaining broth, milk, and heavy cream (if using). Stir to combine.
  5. Add the broccoli: Toss in the broccoli florets. Give everything a good stir.
